Florence-born chef Juri Sbandati opened Trattoria Sbandati in 2009 to share the small family-restaurant food of his home city with the people of Bend — and the dining room on NW College Way has been nearly impossible to get into ever since. The intimate 36-seat space delivers exactly what the name promises: handmade pasta like tagliatelle ai funghi porcini, delicate merluzzo all'acqua pazza, and a tiramisù that has become one of Bend's most talked-about desserts. Open Tuesday through Saturday for dinner only (5pm–8pm Tuesday–Thursday, 5pm–9pm Friday–Saturday), the pace is unhurried and the service personal.
