The Hudson at 900 NW Wall Street is Bend's newest marquee dining destination — a live-fire chophouse and social club that opened in early 2026 and immediately joined the upper tier of Central Oregon dining. Steaks and chops are finished over charcoal and open flame, joined by live-fire vegetables, a whole-fish program, and a seafood raw bar that brings coastal freshness to the high desert. Happy hour runs Wednesday through Sunday 3pm to 5pm, and dinner service Wednesday through Saturday (5pm to 9pm, 9:30 on weekends). Reserve online — this brand-new room is already drawing reservations ahead of walk-in availability on any given night.
