Kusshi on SW Century Drive is one of Bend's most exciting recent additions — a Japanese-Peruvian Nikkei kitchen that blends the techniques of Japan with the ingredients and spirit of Peru. Tiradito (Peruvian raw fish, akin to sashimi), oysters, poke wontons, crispy pork belly, and sashimi ceviche define a menu rooted in the cuisine born when Japanese immigrants arrived in Peru and cooked with what was at hand. Open Wednesday through Saturday 4pm to 9pm, Kusshi has quickly built a loyal following since launching year-round in 2025.
