Hasta Que Olvidemos — now known as Olvi — is one of Bend's most singular concepts: an intimate wine bar on NW Galveston Avenue where all wines are made exclusively for the bar and served only on tap, unavailable anywhere else. Small plates of oysters, seasonal bites, and shareable provisions frame a tasting experience built around curiosity and conversation rather than a traditional restaurant format. Open Monday through Friday from 3pm and into the evening, the bar draws a crowd of Bend's food-and-wine curious who appreciate something genuinely different.
